Fresh Apple Breakfast Parfait

The natural sweet flavor of the fresh Sonya Apple is a perfect compliment to the tangy yogurt and crunchy cereal topping! A healthy morning breakfast for any day of the week.
Makes 2 parfaits
Ingredients:
2 Sonya Apples (rinsed dried and diced-do not peel apples)
The juice from half a lemon
2 Six ounce containers of low fat vanilla yogurt (thick & creamy variety)
1/4 cup protein & fiber cereal (we used a Honey, Almond & Flax Multigrain cereal)
Directions:
Place diced apples in a medium size bowl and squeeze lemon on apples. Toss to coat apples with juice. In two large parfait glasses layer one fourth of the diced apples at the bottom of each glass. Top apples with six ounces of yogurt and layer each parfait with remaining apples (dividing apples evenly between the two glasses). Top each parfait with 1/8 cup of fiber cereal. Serve and enjoy!
